A project aimed at the design and development of low-protein dry pasta for children with inborn errors of metabolism, particularly phenylketonuria. The team worked on formulations based on starches and vegetable oils, seeking a product with a very low protein content, characteristics similar to traditional pasta and potential for scaled-up production, as an affordable alternative to imported products.
