A project aimed at the development of gluten-free (TACC-free) functional cookies made from rice bran, seeking healthier foods with a higher fiber and nutrient content. The project also works on the valorization of rice bran as an agro-industrial by-product, promoting the circular economy and its use as a food ingredient.
